Deluxe Chocolate Marshmallow Bars
I was on the hunt for some great Vegan desserts this holiday season and found this one on a beautiful Vegan blog I follow called Keepin’ It Kind. I have made this recipe a few times already (Thanksgiving, Christmas and a third time just for fun) and people are usually surprised to find that these bars are Vegan. This dessert starts with a layer of brownie, then a gooey layer of marshmallow follows and it is all topped off with a rich and crunchy chocolaty / peanut butter topping. They are amazing.
I plan to make these bars again in a few weeks for another work bake sale – our annual Fat Tuesday bake sale is coming up. This year all monies collected from the sale will go to the ASPCA to help benefit animals in need. With how delicious these bars are I don’t doubt that they will bring in alot of money and I am always happy to contribute my baked goods to help animal charities.
I, for the most part, followed Kristy’s recipe verbatim with the exception that I used all-purpose flour (didn’t have any gluten free on hand, sorry Morgan) and I left out the optional cashews. These bars are quickly becoming my go-to dessert when I need to bake up something quick for a party, for a bake sale or for me to devour myself.
