Beet Salad Face Off
Steamed, cooked, pickled, cold, shredded raw – there are many ways to consume beets. Typically a deep red wine color, you can also find beets golden yellow or red and white striped. Beets are a low calorie and nutritious veggie with a very mild, yet unique flavor. Try a beet for breakfast to get your daily dose of Vitamin C, for lunch in a salad or for dinner as a great source of Iron.
When Morgan challenged me to a beet salad Face Off at first it sounded pretty easy, however I just couldn’t imagine a beet salad without goat cheese. The sharpness and creaminess of the cheese combined with the mild flavor of the beets is just something I had to try to replicate. Sooooo…my version of the Beet Salad includes some Veganized goat cheese.
Morgan’s version uses real goat cheese, but she also changes up from the traditional salad by using her very own pickled onions. I can tell you from experience these pickled onions are great even on their own, but also added a great crunch to her salad. She also uses some of the pickling juice in her dressing, yum!
Both salads (as with all our Face Off’s) are similar yet very different – Vegan or Not-So-Vegan, we hope you enjoy our creations!
