Super Bowl Sausage Dip: Two Ways

The Super Bowl, time for unnecessary betting, eating, and enjoying a full Sunday dedicated to football with friends and family. Susan and I are headed out to our friend’s house for the big day, and we are bring two version of what might be the best dip ever created. Ok, that might be a bit of an overstatement, but in all seriousness, it’s pretty freaking good.

My first encounter with this dip was when my mom brought it to a Memorial Day party. Lasting about 5 minutes, everyone was asking for the recipe and so was I. Definitely a crowd pleaser, it is now a Super Bowl Party staple for our group of friends. There are lots of ways to modify this to your liking, so don’t be afraid to add fresh jalapeños, a can of green chilies, black olives, or some green peppers. I used spicy turkey sausages from Whole Foods meat counter, but you can use anything, real meat or otherwise.

Below is the original version and a vegetarian version. Try it out, mix it up, and make it your own. The only time you will be disappointed is when it is all gone.

2 8oz block of cream cheese, room temperature
1lb of Rosemary Sausage, browned and drained on a paper towel
2 (7 ounce) cans of Rotel Lime & Cilantro (elusive… you are lucky if you find it) or Original Rotel, drained
Red Pepper Flakes (optional)

Mix all ingredients together in a large mixing bowl

Transfer to a 9×13 glass baking dish, and smooth out so even

Bake at 350°F for about 30-40 minutes

Serve warm with corn chips (Fritos), but I prefer tortilla chips.

 

Sausage Dip (Vegetarian)
Baked Chorizo Cheese Dip

2 8oz block of cream cheese, room temperature
2 packages of Melissa’s Chorizo or 1lb of your favorite vegetarian chorizo
2 (7 ounce) cans of Rotel Lime & Cilantro or Original Rotel, drained
2 Serrano Peppers chopped with seeds (optional)

Mix all ingredients together in a large mixing bowl

Transfer to a 9×13 glass baking dish, and smooth out so even

Bake at 350°F for about 30-40 minutes
