Grilled Cheese Face Off

April. A month filled with tax anxiety, showers that will hopefully result in May flowers, and grilled cheese. Who comes up with “National (insert food here) Months,” is beyond me, but April is National Grilled Cheese month, and I find that to be totally awesome. Cheese and bread were basically my favorite food growing up, and I wanted to create something that was more of an “adult” grilled cheese. The old standby of white bread and Kraft American cheese slices, just wouldn’t do. There needed to be a surprise, more flavor and less processed cheese. Adding in some color (arugula), some veggies (red onions), and some heat (Sriracha), was just the beginning…
Finding a vegan alternative to a traditional grilled cheese can be a difficult task, but I knew Susan would be up to the challenge. Having her homemade vegan truffle cashew cheese as the base of her sammie, she kept it simple, only adding tomatoes, as not to overpower the intense flavor of the truffle. Knowing there isn’t always time to make homemade vegan cheese from scratch, she has a quick short cut that makes this an easy to whip up in a pinch.
What is your favorite “National ‘Food’ Month”? Personally, I’m wondering what month “National Peanut Butter~Chocolate Month” would be?

Vegan grilled cheese is where it’s at!
I made my first vegan cheese recently and basically all I did was make toasted sandwiches (that’s what NZers call what y’all call grilled cheese) with it. Mmmm. I used homemade vegan mozzarella, sliced tomatoes and a little fresh basil as the filling – YUM – still can’t believe how delicious it was! The cheese was supereasy to make, too :D
Vegan mozzarella? Please tell me how to make that!

I haven’t tried either of Miyoko’s buffalo mozz recipes yet, but it is definitely on the To Do list. I love the idea of making my own lil balls of buffalo mozzarella :)
