Friday Top Five: Volume 7 – Cinco de Derby
Break out the tequila and the mint, because this weekend is Cinco de Derby. We will be celebrating by eating lots ‘o’ tacos and guacamole, trying to perfect a mint julep, and watching the most exciting 2 minutes in sports. There will be lost of celebrating going on around Chicago, and everywhere else I would imagine, but these are some of our favorite things inspired by this weekends festivities…
1. Kentucky Mud Pie. Growing up in Kentucky, I was dragged to Derby parties with my parents every year. The only upside to this was eating Derby Pie until I couldn’t stand another bite. A wondering combination of chocolate, walnuts (or pecans), and bourbon; it was awesome. If I had been proactive I would have made a gluten free and dairy free version for this weekend, but there is always next year! Also if you want to pick up a pie, Bang Bang Pie Shop has created a Kentucky Mud Pie (looks like a Derby-Mississippi-Mud Pie mash up), which looks fantastic!
2. Mint Julep. I think Mint Juleps shouldn’t just be a Derby thing. The refreshing, bourbon based drink definitely could be a rival to your standard Mojito. I get that it’s a nostalgic thing, but come on, these are delicious.
4. Quesadilla La Reyna del Sur. A Vegetarian (but mostly Vegan) Mexican Restaurant in our neighborhood. We. Are. Obsessed. My husband thinks their Vegan Chorizo is better than any real chorizo he’s ever had. I always order the Tinga – marinated “chicken” – and the Digestivo smoothie. Everything is Vegan and if you are Vegetarian they offer real cheese as an option. Visit Quesadilla La Reyna del Sur at Western & Lyndale in Chicago and Like them on Facebook.
5. La Cocina. Not 100% Vegetarian, but they do offer a Seitan option in place of any meat. Just go to their website, they promote that they have Vegan options right on the homepage…awesome. Located at the corner of Kedzie & George in Logan Square. Don’t miss “Taco Tuesday” – $1.00 tacos ya’ll!
