Mint Pineapple Hi

Once upon a time, at a sushi restaurant that is no longer around, Susan and I went for dinner on a Saturday night. Being that the said-sushi place was rather popular, and occupied a very small space, we had about a 45 minute wait for a table. And what does one do in these situations? Well, one orders a drink. And the drink of choice was a wonderful martini, a Pineapple Hi. There was lots of vodka and very little pineapple juice is this particular cocktail, and after downing two while we waiting, I have very little recollection of our dinner. Though, I sure remembered the cocktail, which is why I decided to tweak it a bit for our first cocktail Face Off!

A love for vodka is a trait I inherited from my mother’s side of the family (wine would be from my father’s side). Always on the look out for a new brand to try, my aunt, Janice, gave me a quinoa based vodka that she had recently tried. Being that it is fair traded and sustainable, the name Fair, seems very fitting.

Meant to be enjoyed after a crappy day at work, at dusk on a weekend, or as a punch for a brunch or picnic. If you want to make a nonalcoholic version, use soda water instead of vodka and do a 1:1 ratio. Or if you want to be really boozy, do a 1:1 ratio of vodka to juice. No one will judge you.

Mint Pineapple Hi

Make 1 cocktail

1 oz vodka
2 oz pineapple juice (the real sutff, not from concentrate)
1-2 tsp mint simple syrup, depending on how minty you want it to be and how strong your mint is
Splash of soda water
Ice cubes

Fill a cocktail glass will ice cubes.  Pour the vodka, pineapple juice, soda water and syrup and stir. Top with some mint leaves and enjoy
