Spicy Tomato & Avocado Gazpacho

Whelp. I was enjoying my summer, but this week, I am not. Sitting directly next to my AC and gulping down insane amounts of lemon water, has gotten a bit old. My fruit consumption has gone up by about 245% and I don’t want to be anywhere near my kitchen, unless it’s to stand in front of my fridge with the doors open until the ‘door open alarm’ starts to go off. Cooking anything seems like an epicly hot chore, so when I can make a meal in under 10 minutes and there is no heat required, I’m all in.

I should say that Gazpacho, is not my favorite thing. But beggars can’t be choosers and I am choosing to stay out of non-air-conditioned kitchen as much as a I can. Not really thinking about what I was going to make until yesterday afternoon, I strolled through Whole Foods (mostly because I love Whole Foods and partly because I was enjoying their AC), and grabbed what I thought would make a good soup, one that I would actually enjoy. Not a huge fan of tomatoes, I didn’t want them to be an overpowering presence, which is why I added the avocado. This turned out to be really yummy, and a bit spicy since I used a rather large jalapeño and some of the seeds found there way into the mix. Definitely serve along some gf toast or crusty bread, or with some grilled shrimp or a bit of crab.

Spicy Tomato & Avocado Gazpacho

Makes 2 large or 4 small servings

4 medium sized tomatoes, quartered
1 garlic clove, roughly chopped
1/2 of a large or 1 small seedless cucumber, chopped
1/2 of a large or 1 small avocado, chopped
1/2 of a medium white onion, chopped
1 jalapeño pepper, seeded and diced
1/4 c olive oil
1 tbsp fresh parsley
1 tbsp fresh basil
Salt and Pepper

Put all ingredients, except salt and pepper, in a Vitamix or food processor and blend until smooth. Season to taste with salt and pepper. Add a few parsley leaves and a drizzle of olive oil and serve immediately or place in fridge to chill.

(Anyone else notice how often we complain about the weather on our blog? Yep, me too.)
