Tomato & Pesto Tofu Scramble

There are no Vegan substitutions for eggs. Sure you can find egg substitutions for your Vegan Baking needs, however, when creating a dish where egg’s are the star of the show, such as Scrambled Eggs, a faux egg just doesn’t exist. Our next best Vegan option is the incredible, versatile, TOFU!

While visiting the Bay Area last week I had a Pesto Tofu Scramble for breakfast which was my inspiration for this Face Off. I’m typically not all that impressed with Tofu Scrambles that I order, but this one was unique. This recipe requires very minimal ingredients because the prepared pesto is really all the flavor you need. Feel free to try my pesto recipe below or my other pesto recipe from November 2012. Better yet, if you have some extra pesto in your fridge use that!

Tomato & Pesto Tofu Scramble

2 tablespoons vegan butter
1 brick firm tofu, pressed and crumbled
2 cups chopped tomatoes
4 tablespoons prepared pesto (or more if you prefer)
salt and pepper to taste

Pesto
2 garlic cloves
1/2 cup pine nuts
2 cups loosely packed basil leaves
3 tablespoons vegan parmesan cheese
3 tablespoons nutritional yeast
1 teaspoons kosher salt
1/2 cup olive oil

Pesto Prep Prepared Pesto

For Pesto

  1. Chop garlic in a food processor.
  2. Add pine nuts and pulse to chop.
  3. Add basil, parmesan, nutritional yeast and salt; pulse to combine.
  4. With food processor running slowly add olive oil until smooth.

For Scramble

  1. Melt butter in a large frying pan over medium-high heat.
  2. Add crumbled tofu and cook for approximately 5 minutes until heated only stirring once.
  3. Add tomatoes, salt and pepper, cook for an additional 5 minutes or until the tomatoes start to release their liquid.
  4. Add pesto, stir to combine and cook and additional 3 minutes.

Tip: The less stirring you do the better! The tofu will become mushy if you stir it around too much. Try to keep some of the small and large textures by avoiding the constant stirring, flipping, mixing, etc.
