Vegan Caesar Salad
At a young age I found myself ordering entree salads for my meals when we were eating out – no, I wasn’t trying to be more adult, nor was I trying to be “healthy,” I just really liked Caesar Salad. What 10 year old wouldn’t? Alright, maybe I was a “unique” child, but it is the truth that once Caesar Salad was introduced to me I ordered it everywhere I went. And over the years I matured from enjoying the Caesar Salad at Chili’s to having it prepared table side (raw egg and all).
When I “recreate” a recipe to make it Vegan I try different ingredients until I get to a taste or a smell that brings me back to what I remember the food tasting or smelling like. For example, my mom’s meatloaf; I knew I had successfully Veganized it when the smell in my house reminded me of sitting at our white kitchen counter, doing my math homework, waiting for dinner to be ready. This Caesar dressing truly didn’t come together until I added the Vegan Worcestershire sauce. This important ingredient which provides the saltiness and pungent vinegar flavor is what makes this recipe a successful replica to the dressing that I used to know.
I actually came up with this Vegan Caesar dressing well before we created this Blog. Caesar salad was something that I really missed eating, and I knew there had to be a way to compassionately recreate the salty and creamy dressing I had grown to love.
Vegan Caesar Dressing
1/2 cup vegan mayonnaise
2 cloves garlic, minced
1 tablespoon minced onion
1 tablespoon lemon juice
2 teaspoons vegan worcestershire sauce
1 teaspoon dijon mustard
1/2 cup olive oil
1/4 teaspoon salt
vegan parmesan cheese
fresh cracked black pepper
- Using your blender combine all dressing ingredients, except for olive oil and salt. Slowly add olive oil while blending on low. Stir in salt.
- Chop romaine and toss with dressing. Top with croutons, Parmesan and pepper.
