Almond Paste

While researching recipes for tomorrow’s Face Off I was inspired by a recipe that called for Almond Paste. I had never heard of it but soon found out, like blanched almonds, almond paste was expensive and usually not Vegan. So I did what I do best; I Veganized it and made it myself.

Let me be the first to tell you that Sugar + Almonds = Heaven. When I made this I had to quickly rinse out the food processor to keep myself from licking it clean. There are so many uses for this paste, mainly in baked goods, I imagine trying it on toast or rice cakes and may even try making my own homemade almond filled candies.

Almond Paste
1 1/2 cups of blanched almonds
1 cup of cane sugar
1/2 cup water

  1. Place almonds in a food processor and blend until finely ground.
  2. Heat sugar and water until boiling and remove from heat.
  3. With the food processor running slowly add the hot sugar water until the mixture is running smooth.
  4. Wrap mixture in saran wrap and store in the refrigerator.

First I had to blanch almonds, then I used those almonds to make my almond paste. The third and final step is the dish that will be revealed tomorrow. Any guesses as to what we are Facing Off?
