Here we go. It’s the holidays, and I knew they were coming, but that doesn’t mean I am prepared. Looking at the calendar, my weekends are pretty much filled up until the middle of January. Holiday parties, traveling, more holiday parties, and boom. December is done and we are falling head first into January.

Has anyone else noticed that October is pretty much over? What the heck? It feels like this month, my favorite month, started last week, and now I look at the calendar and its over? I’m a bit annoyed and mostly mad at myself for not for not taking a break to enjoy it. Ugh.
Can we all just take a moment to think about the fact this year is pretty much over? I found myself buying a Christmas present on Tuesday… whaaaaaaa? OK, so its for Susan’s dog, but still, I am usually the one who is out buying presents the week before Christmas and crossing her fingers to find exactly the right thing for everyone (sorry everyone). So this weekend, I am going to sit at home, relax on the couch, knit my dog a sweater and enjoy the remain moments of calm before the holiday season arrives. I will also be eating this apple crisp for every meal, so there’s that.
It’s officially fall – apples are taking over the produce section of the grocery stores and are being brought to the farmers markets by the truck load. What to do with all these apples? Bake of course. Crisps, Cobblers or Crumbles, I consider these dishes the quick and dirty pie. No rolling out dough necessary, it doesn’t have to look “pretty,” it should come together in under 15 minutes and the only real requirement is that it should taste good. Read more
While researching recipes for tomorrow’s Face Off I was inspired by a recipe that called for Almond Paste. I had never heard of it but soon found out, like blanched almonds, almond paste was expensive and usually not Vegan. So I did what I do best; I Veganized it and made it myself. Read more
Well, I can’t really believe the 4th of July is already here. This year is flying by! So, its time to take a break from all the hectic daily responsibilities of work and general life-stuff, and enjoy our nation’s birthday. One day at work my friend Maureen IMed me and said “I made a Susan friendly recipe.” Of course I was intrigued. She proceeded to bring me a a homemade bar that looked like a date bar, yet tasted like a cookie; it was delicious. She emailed me the recipe and mainly because I could not locate Coconut Butter at the store I decided to make a few adjustments to her version and came up with what I am calling Vegan Power Bars. Goodness gracious, do I love coconut. Samoas are my all time favorite Girl Scout Cookie, Almond Joys and Mounds are two of my top three candy bars, I drink coconut water before and after workouts, and if I buy coconut sorbet, you can bet the pint will be gone within 48 hours…or less (probably less). But somehow, my willpower and I managed not to eat all 16 of these little beauties the day I made them. Read more

As my adventures in baking continue, I have now moved on to cookies. Peanut butter bacon cookies to be exact. Having a great balance between sweet and salty, they were a definite crowd pleaser. I volunteered to bake for my company’s Bake Sale a week ago. You may have seen that Morgan wrote a little bit about this Breast Cancer Bake Sale in her Lemon Pound Cake post. I wanted to make something Vegan , but didn’t want to make my banana bread again, so I was trying to think of something new that was also Vegan and easy to sell in individual pieces. Another great recipe from my new Pure Vegan Cookbook – Sweet Cashew Crema. I have eaten alot of cashew cream and in many different forms, but have never attempted to make it it at home.
