So much for my resolution to get back in my kitchen. In order for this to actually happen, I would have to be somewhat close to my kitchen, which has not been the case as of late. Traveling for work, vacation, and generally being busy, while all good problems to have, has made it difficult for me to get to my happy place. I have found a few moments here and there to start to some spring cleaning in my cabinets, and found some doozies (bulk items packaged over a year ago. Whoops.), which I promptly tossed out. Now that there is less clutter, when I do find an open space in my schedule, I will be able to enjoy it rather than searching through long forgotten pasta, beans and canned items.

Getting more dark, leafy greens into my diet always seems to be a concern. Kale is so good for you, but sometimes is so not fun to eat. Disguising it by making kale chips, or smothering it in avocado are all fine and good, but my favorite way is to make scrambled eggs with a healthy serving of kale, which happen to be delicious when wrapped in warm corn tortillas. When I became Vegan I started to cook and eat more Indian food at home. There are these great pre-cooked packets from Tasty Bite and Kitchens of India that make at-home Indian food very easy; all of them are Vegetarian, most are Vegan. However, I discovered it is also just as easy to create your own Indian dishes from scratch, especially if you have Garam Masala and Curry Powder on hand.
An unassuming restaurant, in an unassuming strip-mall on an unassuming highway in Florida. This describes the exact location to one of the best restaurants I’ve been to in the past few years. Always a must when visiting my parents in Naples, Inca’s Kitchen is a Peruvian restaurant serving up fresh seafood and tasty sangria. And at the moment, Florida would be a welcome change from the zero degree weather we are experiencing here in Chicago. Read more
When I come home late from working out, I am always craving something really filling, but don’t want to undo all the work I’ve done! So, putting a bunch of ingredients that contain healthy fats in a salad is a prefect way to fill up and to keep from snacking after dinner. Read more
About 5 years ago, I decided to try being vegan for 3 months. This was my first step in understanding where the food I consume comes from and what I am putting in my body. Learning about the vegan diet, opened my eyes to how animals make their way to our plates and how our decisions can affect the world we live in. Read more
I made a “real” bolognese sauce about 6 or 7 years ago that my husband went crazy over. I never wrote down the recipe and of course I could never repeat what I had created the first time around. I like to believe that the Vegan Gods were the cause of my forgetfulness. Well Seitan, you won… Read more
Lately I’ve been obsessed with curry and turmeric. One of my favorite recipes to come out of my kitchen recently is the curry lamb burgers I made for our first Face Off. Ground lamb is a staple in my freezer and can be very versatile. Use instead of ground beef in pasta sauces or mix with quinoa and stuff in peppers or tomatoes.
I have a full time job and unfortunately it’s not writing this blog. It is quite normal that I will walk in my door after 7pm without an idea for dinner. I often find myself whipping together something quick with whatever I have in my fridge or pantry on these late nights. You see, even if it’s late or if I’m tired I still feel the need to make a home cooked meal. Read more
