Spicy Noodle Salad

So much for my resolution to get back in my kitchen. In order for this to actually happen, I would have to be somewhat close to my kitchen, which has not been the case as of late. Traveling for work, vacation, and generally being busy, while all good problems to have, has made it difficult for me to get to my happy place. I have found a few moments here and there to start to some spring cleaning in my cabinets, and found some doozies (bulk items packaged over a year ago. Whoops.), which I promptly tossed out. Now that there is less clutter, when I do find an open space in my schedule, I will be able to enjoy it rather than searching through long forgotten pasta, beans and canned items.

Kale & Egg Tacos

Getting more dark, leafy greens into my diet always seems to be a concern. Kale is so good for you, but sometimes is so not fun to eat. Disguising it by making kale chips, or smothering it in avocado are all fine and good, but my favorite way is to make scrambled eggs with a healthy serving of kale, which happen to be delicious when wrapped in warm corn tortillas. When I became Vegan I started to cook and eat more Indian food at home. There are these great pre-cooked packets from Tasty Bite and Kitchens of India that make at-home Indian food very easy; all of them are Vegetarian, most are Vegan. However, I discovered it is also just as easy to create your own Indian dishes from scratch, especially if you have Garam Masala and Curry Powder on hand.

An unassuming restaurant, in an unassuming strip-mall  on an unassuming highway in Florida. This describes the exact location to one of the best restaurants I’ve been to in the past few years. Always a must when visiting my parents in Naples, Inca’s Kitchen is a Peruvian restaurant serving up fresh seafood and tasty sangria. And at the moment, Florida would be a welcome change from the zero degree weather we are experiencing here in Chicago. Read more

Curry Lamb Burgers

Lately I’ve been obsessed with curry and turmeric. One of my favorite recipes to come out of my kitchen recently is the curry lamb burgers I made for our first Face Off. Ground lamb is a staple in my freezer and can be very versatile. Use instead of ground beef in pasta sauces or mix with quinoa and stuff in peppers or tomatoes.
