Spicy Noodle Salad

So much for my resolution to get back in my kitchen. In order for this to actually happen, I would have to be somewhat close to my kitchen, which has not been the case as of late. Traveling for work, vacation, and generally being busy, while all good problems to have, has made it difficult for me to get to my happy place. I have found a few moments here and there to start to some spring cleaning in my cabinets, and found some doozies (bulk items packaged over a year ago. Whoops.), which I promptly tossed out. Now that there is less clutter, when I do find an open space in my schedule, I will be able to enjoy it rather than searching through long forgotten pasta, beans and canned items.

Kale & Egg Tacos

Getting more dark, leafy greens into my diet always seems to be a concern. Kale is so good for you, but sometimes is so not fun to eat. Disguising it by making kale chips, or smothering it in avocado are all fine and good, but my favorite way is to make scrambled eggs with a healthy serving of kale, which happen to be delicious when wrapped in warm corn tortillas. Chocolate Banana Shake

We’ve all been there before. Staring at the food you have to use up before leaving for a work trip or vacation. Seeing all the dollars you will be wasting if you don’t consume it all prior to heading to the airport. I’m doing this right now. I’m in my kitchen. Staring. The already somewhat-brown bananas, my container constantly full of arugula, sweet potatoes that have probably been there too long already. I see them all, and I have to think of something to do with them.

Chicken Salad Face Off

There is something comforting to me about a scoop of chicken salad between two halves of a croissant, in the middle of a tomato or on a bed of mixed greens. It brings back memories of eating lunch in a bustling diner while drinking ice tea and chatting with friends or family. Of course, I am a bit particular about my chicken salad… I don’t like my chicken salad too mayo-y, too watery or too dry. It has to be just right, and  making it at home is the way to ensure it turns out perfect. Read more

White Bean, Turkey & Kale Soup

Here’s the deal. I really hate planning things out in advance. I’m not the best at packing ahead for trips, setting up a weekly menu for myself, or even getting a grocery list together before I get to Whole Foods. Of course the last one might be a bit on purpose, since I like having an excuse to get a tea and stare at the cute baristas while I gather my thoughts. Read more

Victory’s Banner

One weekend our friend Shivani asked us to join her for brunch at a vegetarian restaurant she had tried recently – Victory’s Banner. Located in the Roscoe Village neighborhood of Chicago (my old stomping grounds) at the corner of Roscoe & Hoyne, Victory’s Banner has been serving up vegetarian brunch and lunch for over 10 years. Kale & Avocado Salad

First, let me apologize for the not so pretty picture… I took this at my desk at work, and wasn’t thinking at the time it would be on the blog… But decided to post it anyways because it’s one of my favorite items in the Whole Foods prepared food section. Filled with lots of nutritious veggies, I can never pass up getting some when I see it… Read more

Oasis Cafe

With my last week of working in the loop looming, I knew I had to get my fill of my favorite lunch spots, and Oasis was at the top of my list. Located in the back of a jewelry store on Wabash and Washington (yes, a jewelry store), it’s really easy to miss if you aren’t paying attention. Read more

The Good Fat Salad

When I come home late from working out, I am always craving something really filling, but don’t want to undo all the work I’ve done! So, putting a bunch of ingredients that contain healthy fats in a salad is a prefect way to fill up and to keep from snacking after dinner.  Read more

Foodease

There was one day (yes only one) where the stars aligned and I was able to take a long lunch. So, Morgan and I headed out to Water Tower Place to try Foodease, a gourmet food market. The big draw for us was the beautiful looking salad bar, although they offer much more than that. Read more
